Introducing BURNTBAR
11 years ago, I opened a salad restaurant in Cairo, Egypt. I knew nothing about restaurants but grew up in a family where passion for cooking was woven into the fabric of everyday life. Food was not just a meal served, it was an event where we could connect, share our day’s stories, and laugh. After several years of running the restaurant and struggling to keep it going, I decided to go back to the corporate world and try to salvage my career. Yet leaving my passion and ambition behind, I could not stop thinking about one item on my restaurant menu that had always stood out, our burnt granola. It was a beloved favorite amongst our customers, was simple yet carried the essence of our family’s culinary passion.
I have always been a fan of granola but could never find the right one amongst commercial products, everything was too sweet, full of added ingredients that I just did not like nor understood the purpose of having them. I could not find anything even close to how I enjoyed my granola, nothing really ticked the box for me. So together with my dad we created our own recipe, with simple, honest, and nourishing ingredients, that not only were good for us nutritionally but also delicious in a unique flavor.
Our original recipe was intentionally burnt, yes you read that right BURNT. I genuinely believe that this flavor is one of the most unappreciated flavors that exists. How many times have you reached out to the charred edges on your steak and devoured them, or the crispy burnt lasagna sides, or left your toast a minute to two longer and indulged in that extra dark crunch.
This unique natural caramelization – AKA Maillard reaction is equivalent to none and I believe there are a lot of people out there that crave this flavor often, like myself.
So as a recent Immigrant to the US and so determined not to let my cherished recipe fade, I decided to embark on a journey to transform it and develop a perfectly extra toasted, burnt granola bar. After many after work hours and experiments in my own kitchen, a wholesome, crunchy, earthy, and nutty granola bar with a rich deep flavor was born.
We are launching a fundraiser to bring our bar to life so we are looking for the support of like minded backers.
